Bread And Butter Pickles
- 1 pound pickling cucumbers unpeeled, thinly sliced lengthwise
- 6 shallots thinly sliced
- 1/4 cup kosher salt
- 1 cup white vinegar
- 1 cup sugar
- 2 teaspoons mustard seeds
- 1/2 teaspoon red pepper flakes
- 1/4 teaspoon ground turmeric

- Combine cucumber, shallots and salt in a medium stainless steel or glass bowl. Cover; let stand for 3 hours.
- Drain, then rinse cucumber mixture. Drain on paper towels.
- Place vinegar and remaining ingredients in a medium saucepan on high heat. Stir, without boiling, until sugar dissolves. Bring to a boil. Remove from heat.
- Spoon cucumber mixture into hot sterilized jars. Pour enough hot vinegar mixture into jars to cover cucumber mixture. Seal immediately. Label and date jars when cold. Once opened, store in the refrigerator.
