Coffee Pudding Cake
- 1 c. flour
- 3/4 c. sugar
- 2 Tbsp. plus 1 tsp. Espresso coffee powder
- 1 1/2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 1/4 c. milk
- 1/4 c. heavy cream
- 3 Tbsp. melted butter
- 1 tsp. vanilla
- 1/4 c. packed brown sugar
- 1 1/4 c. hot water
- 2 Tbsp. brandy
- whipping cream or vanilla ice cream (for serving)
- Sift flour, 1/2 cup sugar, 2 tablespoons Espresso powder, baking powder, baking soda and salt in large bowl.
- Mix milk, cream, butter and vanilla.
- Add to dry ingredients.
- Stir until blended well.
- Spread batter in 8-inch cake pan.
- Mix remaining 1/4 cup sugar, brown sugar and remaining 1 teaspoon Espresso coffee powder.
- Sprinkle over batter.
- Mix brandy and hot water.
- Pour over top of cake.
- Bake at 350u0b0 for 35 minutes, until cake is set.
- Serve warm with whipped cream or ice cream.
