Evelyn'S Vegetable-Oat Patties
- 1 medium carrot
- 1 medium zucchini
- 1 stalk celery (rib)
- 1/4 large green pepper
- 1 medium onion, chopped
- 1 (4 oz.) can mushrooms (including liquid)
- 1/4 c. parsley
- 2 pkg. George Washington broth or other seasoning
- 1/4 tsp. marjoram
- 1/4 tsp. sage
- 1/4 tsp. thyme
- 1/4 tsp. onion powder
- oatmeal (uncooked)
- Place all ingredients except oatmeal in blender and blend well. Pour into bowl and add 1 to 1 1/2 cups uncooked oatmeal; mix well. Add a little at a time until mixture is thick.
- Let stand until liquid is absorbed and mixture holds together.
- (May be mixed in evening and refrigerated overnight.)
- Spray frypan with Pam; form mixture into patties, being sure they aren't too thick.
- Brown on both sides.
- May be used for "burgers" or as patties with gravy as entree.
- These freeze well.
