Lamb Rogan Josh
- 1/2 cup curry paste rogan josh
- 1 pound lamb cubed
- 1 tablespoon vegetable oil
- 1 tablespoon ghee or butter
- 1 onion medium, finely chopped
- 2 bay leaves
- 4 cardamom pods bruised
- 1 cinnamon stick halved
- 1 teaspoon ground turmeric
- 1/2 cup plain greek yogurt
- 2 tablespoons mint chopped
- pappadums
- basmati rice
- Mix the curry paste and lamb in a medium bowl. Cover with plastic wrap. Refrigerate at least 3 hours.
- Heat the oil and ghee in a large saucepan on medium heat. Add the onion and cook for 5 mins, stirring occasionally. Add the bay leaves and spices and cook, stirring for 1 min. Increase the heat to high and add the lamb. Cook, while stirring for 3 mins. Reduce the heat to low; cover and cook, stirring occasionally, for 15 mins.
- Stir in 1/2 cup water. Cook, covered, for 1 hour. Remove from the heat and stir in the yogurt and mint. Season to taste and serve with rice and pappadums.
