Green Chicken Curry

  1. Heat oil in a saucepan over medium heat. Saute onion for 3-4 mins, until tender. Add curry paste and cook, stirring, for 1 min, until fragrant. Add coconut milk, 1/2 cup water, fish sauce and brown sugar. Bring to a boil, stirring. Add potato and green beans. Reduce heat to low and simmer, stirring occasionally, for 15 mins, until potato is tender.
  2. Remove from heat and stir in chicken and lime juice. Simmer for 1-2 mins, until heated through. Serve with basmati rice. Garnish with cilantro.
