Sweet Maple Pumpkin Bread
- 5 cups pumpkin canned
- 1 cup turbinado sugar
- 2 flax "eggs", 2 tablespoons flax meal + 6 tablespoons water, let sit for 5 minutes
- 2/3 cup maple syrup
- 2/3 cup almond milk
- 1/3 cup coconut oil
- 1 teaspoon vanilla extract
- 4 cups spelt flour
- 3 teaspoons baking powder
- 3 teaspoons baking soda
- 1 tablespoon cinnamon
- 1 teaspoon nutmeg
- Preheat oven to 350 degress. Oil 2 loaf pans
- Combine pumpkin, sugar, maple syrup, eggs, milk, oil, and vanilla extract in a bowl.
- In a separate bowl combine flour, baking powder, baking soda, cinnamon, and nutmeg
- Bake for 1 hour.
- Let cool in pans for 15 minutes, then let cool on a wire rack.
