Beef And Three Potato Stew
- 4 1/2 pounds beef chuck or stew meat, chopped coarsely
- plain flour for dusting
- 1/4 cup vegetable oil
- 2 onions peeled and chopped finely
- 4 slices bacon chopped coarsely
- 4 cups beef stock
- 1 sweet potato orange, chopped coarsely
- 4 new potatoes baby
- 7 ounces sweet potato white, chopped coarsely
- 2 tablespoons chopped fresh thyme coarsely
- 1 tablespoon tomato paste
- 1 tablespoon finely chopped fresh parsley
- Preheat the oven to 350u0b0F. Toss the beef in the flour and shake away the excess. Heat half of the oil in a 2.5 quart flameproof casserole dish and cook the onion and bacon, stirring, until the onion is soft. Remove from dish.
- Heat the remaining oil in the dish and cook the beef, in batches, until browned.
- Return the onion mixture to the dish and stir in the stock. Cook, covered, in the oven for 1 hour.
- Add the potatoes and thyme. Cook, covered, for 1more hour or until the beef is tender. Stir in the tomato paste.
- Serve sprinkled with parsley.
