Beef And Three Potato Stew

  1. Preheat the oven to 350u0b0F. Toss the beef in the flour and shake away the excess. Heat half of the oil in a 2.5 quart flameproof casserole dish and cook the onion and bacon, stirring, until the onion is soft. Remove from dish.
  2. Heat the remaining oil in the dish and cook the beef, in batches, until browned.
  3. Return the onion mixture to the dish and stir in the stock. Cook, covered, in the oven for 1 hour.
  4. Add the potatoes and thyme. Cook, covered, for 1more hour or until the beef is tender. Stir in the tomato paste.
  5. Serve sprinkled with parsley.
