Chicken Divan
- 1 pkg. dumpling noodles
- 1/4 c. butter or margarine
- 1/4 c. flour
- 1 1/2 c. chicken broth (from boiled chicken)
- 2 c. white wine to taste
- 1/8 tsp. nutmeg
- 1/2 c. heavy cream (Coffee Rich)
- 1/2 c. Parmesan cheese, twice
- 2 pkg. frozen broccoli
- 1 boiled chicken
- Boil chicken and bone; save broth.
- Melt butter in saucepan over low heat.
- Blend in flour.
- Cook over low heat; stir until smooth and bubbly.
- Remove from heat.
- Stir in broth; heat to boiling.
- Stir constantly and boil for 1 minute.
- Remove from heat. Stir in wine and nutmeg; add cream and Parmesan cheese.
- Place layers of noodles, broccoli and chicken in ungreased baking dish. Pour sauce over layers.
- Sprinkle with Parmesan cheese.
- Broil in oven until golden.
- Makes 4 to 5 servings.
