Banana Cake
- 1 1/4 c. sugar
- 1/2 c. (1 stick) butter
- 1/2 tsp. nutmeg
- 2 eggs
- 1 c. mashed ripe bananas (2 or 3 medium)
- 1 tsp. vanilla
- 2 1/2 c. flour
- 1 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 c. buttermilk
- 1/2 c. chopped nuts
- Cream Cheese Frosting
- Cream together sugar, butter and nutmeg until fluffy.
- Add eggs, one at a time, beating well after each addition.
- Stir in bananas and vanilla.
- Combine flour, baking powder, soda and salt. Beat into creamed mixture alternately with buttermilk.
- Stir in nuts.
- Spread batter in greased 13 x 9-inch pan.
- Bake in 350u0b0 oven for 30 to 35 minutes or until cake tester inserted in center comes out clean.
- Cool on rack.
- Frost with Cream Cheese Frosting.
