Coconut Oatmeal Cookies
- 1 1/2 sticks unsalted butter room temperature
- 1 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 eggs
- 2 teaspoons pure vanilla extract
- 1 tablespoon molasses amber
- 1/4 cup milk
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- 2 cups old fashioned oats
- 1 cup shredded unsweetened coconut
- 1 1/2 cups white chocolate chips
- 1 cup dried cranberries
- 1/2 cup chopped walnuts and Pecans
- In a large bowl, cream butter and sugars until fluffy. Add the eggs and beat well. Stir in the vanilla, molasses and milk. In a medium bowl stir together flour, baking soda, salt and cinnamon, add to the wet ingredients and mix well. Add the oats and coconut, mix well. Add the chocolate chips, cranberries and chopped nuts, mix well.
- Preheat oven to 350 degrees. Drop dough onto ungreased baking sheets by tablespoons, bake for 13-16 minutes.
- Remove and cool on pans and then transfer to wire racks. Store in covered container.
