Mel'S Seafood Medley
- 1/2 lb. any whitefish
- 1/2 lb. scallops
- 1 (8 oz.) pkg. sealegs
- 2 bottles clam juice
- 1 stick margarine, softened
- 8 oz. sour cream
- 2 lemons
- garlic powder to own taste
- 2 tubes Ritz crackers, crushed to make mix (may need more)
- salt and pepper to taste
- paprika
- Mix together clam juice, sour cream and margarine.
- Add enough Ritz crackers to make a sloppy mixture.
- Add the juice of 1 lemon. Dice all fish; add to cracker mix.
- Put into a deep casserole dish.
- Do not overfill, as it will become bubbly while cooking. Sprinkle more crushed Ritz, juice of 1 lemon and paprika on top. Bake at 350u0b0 for approximately 1 hour.
- Any fish may be used such as shrimp, crabs, clams, pollack, etc.
- Use your imagination. This is an economical and filling dish.
