Mixed Vegetable Pulad
- 1 1/2 lb. rice
- 2 1/4 pt. water
- 8 oz. carrots
- 1 lb. peas
- 8 oz. potatoes
- 2 bay leaves
- 2 big onions
- 2 inch pieces coarsely ground cinnamon
- 3 tsp. coarsely ground white cumin seeds
- 4 coarsely ground cloves
- 6 coarsely ground cardamon
- 1 tsp. red chili powder
- 6 oz. ghee (clarified butter)
- Wash and soak rice for 15 minutes.
- Cut the carrots into small cubes and potatoes into big pieces.
- Fry one sliced onion with green cardamon, bay leaves, until light brown.
- Add the peas, carrots, rice, coarsely ground spices and salt.
- Cook until half tender.
- Now add small pieces of peeled potatoes and cook on low fire until tender and water in rice is absorbed.
- Sprinkled fried onion slices on the top.
- Serve hot.
- Serves 9 people.
