Piri-Piri Chicken
- 8 cloves garlic minced
- 3 lemons juiced, plus wedges to serve
- 1/3 cup whiskey
- 1 fresh bay leaf
- 2 teaspoons sweet paprika
- 1/4 cup olive oil
- 4 chicken breasts skin-on
- 1 red onion thinly sliced into rings
- 1 pound cherry tomatoes
- 4 red chilies long
- 8 slices ciabatta bread
- 2 tablespoons olive oil
- 1/2 lemon juiced
- 1 red chili long, finely chopped
- 1 clove garlic minced
- Combine garlic, 2/3 of lemon juice, whiskey, bay leaf, paprika, 2 tbsp oil and chicken. Cover and chill for 1 hour.
- Combine remaining lemon juice, 1 tbsp oil and onion. Season. Set aside.
- Preheat a grill pan over medium heat. Cook chicken for 8-10 mins per side, basting with marinade, until golden and cooked through.
- Brush tomatoes, chilies and bread with remaining oil. Cook for 2-3 mins per side, until vegetables are just tender and bread is golden.
- Combine piri-piri sauce ingredients. Season.
- Top chicken and vegetables with piri-piri sauce. Serve with onion, lemon wedges and bread.
