Gluten Free Macaroons Dipped In Dairy Free Chocolate Ganache
- 4 egg whites
- 2/3 cup sugar
- 1/4 teaspoon salt
- 2 teaspoons vanilla
- 1/4 cup coconut flour
- 3 cups sweetened coconut flakes
- 1 cup chocolate chips casein free
- 1/2 cup creamer SO Delicious coconut
- 3 teaspoons instant coffee to taste
- Preheat oven to 350 degrees.
- Beat together egg whites, sugar, and salt until very frothy, 3-4 minutes.
- Stir in vanilla, coconut flour, and coconut flakes.
- Roll the mixture into tablespoon-sized balls and drop onto well greased or parchment lined baking sheet.
- Bake 10-15 minutes, or until tops are golden brown.
- Cool.
- Place chocolate chips and instant coffee in a medium sized bowl
- Heat the creamer over medium heat until it reaches a gentle boil.
- Pour the warm creamer over the chocolate and coffee, whisk until smooth.
- Dip the bottoms of the macaroons in the chocolate mixture.
- Place macaroons chocolate side up on a large plate and refrigerate 1 hour, or until set.
