Creamy Bean Soup
- 1 pound lima beans
- 8 cups water
- 2 teaspoons knorr chicken flavor bouillon
- 1 white onion large, quartered
- 3 cloves garlic unpeeled
- 1/3 cup Mexican crema or sour cream
- 2 tablespoons mint
- Cover beans with water and soak overnight. Rinse and drain.
- Combine beans, 8 cups water and Knorr(R) Chicken flavor Bouillon in a medium saucepan. Bring to a boil. Reduce heat and simmer covered about 1-1/2 hours or until beans are very tender.
- Meanwhile, roast onion and garlic in a dry medium skillet over medium heat about 10 minutes or until garlic is browned and onion is tender, turning occasionally. Peel garlic and roughly chop onion. Add to beans and simmer about 10 minutes. Process soup, in batches, in a blender or food processor until smooth. Serve drizzled with Mexican crema and garnish with mint.
