Welsh Cookies
- 2 cups all purpose flour
- 1 1/3 tablespoons baking powder
- salt
- 9/16 cup margarine cold, sliced into small cubes
- 6 3/4 tablespoons milk
- 1 1/3 cups raisins
- 3/4 cup sugar
- 1 teaspoon ground cinnamon
- Sift the flour, baking powder, and a pinch of salt into a large bowl.
- Add the margarine and mix using your fingertips.
- Add the milk and raisins, and mix using a wooden spoon until a dough forms.
- Place the dough on a floured surface and knead ot several times. Roll it out and cut portions about 1 centimeter each.
- Press the portions against the floured surface until they are 1/2 centimeter thick.
- Heat a skillet on medium-low heat and cook the cookies until they are golden brown on both sides.
- Turn off the stove, let the cookies cool off completely, and serve.
