White Chocolate Cheesecake
- 1 1/4 c. pound cake crumbs
- 3 (4 oz.) bars white chocolate
- 3 (8 oz.) pkg. cream cheese
- 1 c. sugar
- 2 (8 oz.) cartons sour cream
- 1 Tbsp. apricot brandy (optional)
- 1 tsp. vanilla
- sliced strawberries (garnish)
- Press crumbs on bottom of a lightly greased spring-form pan. Bake at 350u0b0 for 5 minutes.
- Cook on wire rack.
- Melt white chocolate in heavy saucepan over low heat, stirring constantly, then cool.
- Beat cream cheese at medium speed for 3 minutes.
- Add sugar.
- Beat 5 minutes; add white chocolate.
- Beat 5 minutes; add sour cream and vanilla, mixing well.
- Pour over crust, then bake at 350u0b0 for 30 to 35 minutes.
- Cool 10 minutes.
- Run knife around sides of pan to release sides.
- Let cool in pan on wire rack. Cover and chill 8 hours.
- Remove pan and garnish.
