Aunt Pearl'S Blackberry Jam Cake
- 3 c. flour
- 1 tsp. ground cloves
- 1 tsp. allspice
- 1 tsp. cinnamon
- 2 large apples, finely chopped (I like Granny Smith)
- 8 oz. finely chopped dates
- 1 c. real butter
- 2 c. sugar
- 4 eggs
- 1 tsp. baking powder
- 1 c. milk
- 1 tsp. soda
- 1 c. buttermilk
- 2 c. blackberry jam
- 2 c. chopped nuts (pecans, walnuts or black walnuts)
- Sift together flour, cloves, allspice and cinnamon.
- Add apples, dates and nuts.
- Stir, coating fruit with flour mixture. Set aside.
- Blend butter and sugar until creamy.
- Add eggs, one at a time, beating well.
- Set aside.
- Dissolve baking powder in milk. Dissolve soda in buttermilk.
- Add flour mixture, milk, buttermilk and jam alternately to egg mixture.
- Beat two minutes.
- Pour batter into 4 greased and floured 8 or 9-inch cake pans.
- Bake at 325u0b0 for 35 to 45 minutes or until toothpick inserted into center comes out clean.
- Cool and ice with date frosting.
