Caribbean Grilled Pork Rib-Eye

  1. 1. In a blender, puree the lime, ginger, garlic, shallot and jalapeno
  2. 2. Add the spices: allspice, cinnamon, clove, white and black pepper, cayenne. Blend well
  3. 3. Add molasses and rum. Blend & gradually drizzle in oil.
  4. 4. Marinate pork steaks in the mixture overnight or for at least a few hours
  5. 5. Season with salt before grilling
  6. 1. Soak beans overnight or pour boiling water over beans and soak for an hour. Drain and rinse.
  7. 2. Saute bacon until translucent; add onion, garlic, celery, jalapeno & cumin. Cook five minutes
  8. 3. Add water, beans, bay leaves and ham hock, simmer, until beans are tender. Pull the ham hock meat from bone
  9. 4. Add meat back to beans. Adjust seasonings with salt, pepper, red pepper flakes. Add sherry
  10. 1. Just before serving stir in the cilantro
