Baked Orange And Passionfruit Cheesecake
- 13 ounces graham crackers broken
- 1 cup butter melted
- 1 pound cream cheese chopped, softened
- 1 cup granulated sugar
- 1 Orange
- 1/3 cup juice
- 2 tablespoons all-purpose flour
- 5 eggs
- 1/2 cup heavy cream
- 6 ounces passionfruit pulp
- whipped cream to serve
- Preheat oven to 325u0b0F. Line an 8 inch springform pan with parchment paper.
- In a food processor, process graham crackers to crumbs. Add butter and pulse to combine. Press mixture into base and side of prepared pan. Chill for 30 mins.
- Meanwhile, beat cream cheese, 3/4 cup sugar and orange zest together until smooth. Beat in 3 tbsp orange juice and flour. Add eggs, 1 at a time, beating well after each addition. Beat in cream then transfer to prepared pan and place on a baking tray. Bake for 1 hour 10 mins, until just set in the center. Turn oven off and let cool in oven with door ajar (to prevent cracking). Chill overnight.
- In a saucepan, combine passionfruit pulp with remaining sugar and orange juice. Stir over low heat until sugar dissolves. Simmer for 4-5 mins, until thickened and syrupy. Let cool slightly.
- Arrange orange segments over cheesecake then pour passionfruit syrup over top. Serve with whipped cream.
