Chicken Quesadillas With Tomato Salad
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- 3 tablespoons olive oil
- 1 pound tomatoes sliced
- 1/2 red onion thinly sliced
- 2 tablespoons fresh chives chopped
- 3 tablespoons vegetable oil
- 1 pound chicken breast cut into bite-sized pieces
- 5 1/4 ounces cream cheese
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder mild
- 4 tortillas
- 4 tablespoons fresh cilantro chopped + extra sprigs, to garnish
- 3 1/2 ounces gouda cheese grated
- For tomato salad, whisk vinegar with honey and olive oil and season. Toss with tomatoes, red onion and chives. Set aside.
- Heat 1 tbsp vegetable oil in a frying pan, season chicken and saute for 4-5 mins until cooked through. Meanwhile, beat cream cheese with lime juice and chili. Add chicken and distribute between 2 tortillas, spreading it almost to edges. Add chopped cilantro and cheese. Place remaining tortillas on top.
- Heat 1 tbsp vegetable oil in a frying pan, add 1 quesadilla and cook until crisp and golden on each side. Repeat with remaining quesadilla. Cut into quarters and garnish with cilantro. Serve with tomato salad.
