Curried Beef And Chickpea Patties
- 1 pound lean ground beef
- 2/3 cup chickpeas canned, rinsed
- 2 cups breadcrumbs soft fresh multigrain
- 1/4 cup curry paste korma
- 4 green onions finely chopped
- 1 egg lightly beaten
- 1 cup brown basmati rice
- 1 pound green beans trimmed and halved
- 2 teaspoons vegetable oil
- salad greens to serve
- 3/4 cup low fat plain yoghurt
- Mix ground beef, chickpeas, breadcrumbs, curry paste, onions and egg in a large bowl. Season with pepper. Firmly shape mixture into 8 patties, pushing chickpeas into the center of each patty.
- Cook rice in a saucepan of boiling water according to package directions. Drain. Cook beans in a separate saucepan of boiling water for 3 mins or until tender. Drain.
- Meanwhile, heat oil in a nonstick skillet on medium heat. Cook patties, in 2 batches, for 10 mins each or until browned and cooked through.
- Divide rice, beans, salad and patties among serving plates. Serve topped with yogurt.
