Honey-Soy Marinated Cod
- 1/4 cup honey
- 1/4 cup soy sauce
- 1 clove garlic minced
- 1/2 inch fresh ginger knob, peeled and grated
- 1 pound fresh cod fillets 3-4 fillets per pound
- nonstick cooking spray
- Whisk together honey, soy sauce, garlic, and ginger in bowl. Place cod fillets in bowl and turn a few times to coat with marinade.
- Cover bowl with plastic wrap and transfer to refrigerator for at least 30 minutes, and no longer than 8 hours.
- Preheat oven to 375u0b0F.
- Spray casserole dish with nonstick cooking spray.
- Remove bowl from refrigerator. Transfer fillets to casserole dish and pour marinade over top.
- Bake cod on middle rack of oven for 10-20 minutes, depending on thickness of fillets (about 10 minutes per inch of thickness), until crust is golden brown and fish is opaque in center and just starts to flake with a fork.
- Check to see that cod is done. Remove from oven or add time as needed.
- Plate cod and drizzle thickened marinade over top. Serve immediately.
