Honey-Soy Marinated Cod

  1. Whisk together honey, soy sauce, garlic, and ginger in bowl. Place cod fillets in bowl and turn a few times to coat with marinade.
  2. Cover bowl with plastic wrap and transfer to refrigerator for at least 30 minutes, and no longer than 8 hours.
  3. Preheat oven to 375u0b0F.
  4. Spray casserole dish with nonstick cooking spray.
  5. Remove bowl from refrigerator. Transfer fillets to casserole dish and pour marinade over top.
  6. Bake cod on middle rack of oven for 10-20 minutes, depending on thickness of fillets (about 10 minutes per inch of thickness), until crust is golden brown and fish is opaque in center and just starts to flake with a fork.
  7. Check to see that cod is done. Remove from oven or add time as needed.
  8. Plate cod and drizzle thickened marinade over top. Serve immediately.
