Taco Pie
- 1 1/2 lb. ground chuck
- 1/3 c. finely chopped onion
- 1 pkg. taco seasoning mix
- 1 (4 oz.) can diced green chilies, drained
- 1 c. milk
- 1 c. biscuit baking mix
- 2 eggs
- 1 c. mild grated Cheddar cheese
- tomatoes
- lettuce
- sour cream
- In a large skillet, cook ground beef and onion until beef is brown; drain.
- Combine beef with taco seasoning mix and spread in a 10-inch pie plate.
- Sprinkle with chilies.
- Beat milk, baking mix and eggs until smooth, 15 seconds on high in a blender or 1 minute with hand mixer.
- Pour milk mixture over beef in pie plate. Bake uncovered in a preheated 400u0b0 oven for 35 minutes.
- Sprinkle with cheese.
- Bake until golden brown, 8 to 10 minutes.
- Top with sour cream, chopped tomatoes and lettuce.
- Makes 6 to 8 servings.
