Pineapple Coconut Muffins
- 1 3/4 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup desiccated coconut flakes Unsweetened
- 5 15/16 tablespoons egg
- 3 5/8 tablespoons corn oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 3 cups pineapples Canned, diced
- 1/2 tablespoon brown sugar
- 1 tablespoon desiccated coconut flakes Unsweetened
- Preheat oven to 200C/400F. Sift flour then add baking powder, salt, sugar, and coconut and mix through.
- Beat eggs and vanilla extract well then add oil, milk and pineapple and stir well. Add dry mixture to wet ingredients and combine quickly. Take care not to over-mix.
- Divide the batter into 12 greased or lined muffin cups, about 3/4 full. Sprinkle the top of the muffins with coconut flakes and brown sugar. Bake for about 25 minutes.
