Fresh Butter Bean Salad (Vegan)

  1. To a bowl add the spring onion, tomatoes and avocado. Season well with salt, pepper and a good squeeze of lemon juice and give it a good mix through.
  2. Add the olives, seeds and rocket to the bowl and tear in the basil leaves.
  3. Heat the beans as per the instructions on the tin, drain and add to the salad. (Alternatively, you can leave the beans cold, but i think heating them adds something to the salad).
  4. Add a drizzle of proper olive oil over the salad and toss to combine. The juices from the tomatoes will combine with the lemon juice and the oil to make a delicious fresh dressing. Enjoy!
