Fresh Butter Bean Salad (Vegan)
- 1 can butter beans or other bean of your choice, cannellini would work well!
- 1/2 avocado cubed
- 2 handfuls rocket arugula
- 10 cherry /plum tomatoes, cut into quarters
- olive oil
- lemon juice
- 1 spring onion /scallion/green onion, sliced thinly on an angle
- 2 tablespoons seeds such as sunflower or pumpkin
- 12 olives green/black or both, halved
- salt
- black pepper

- To a bowl add the spring onion, tomatoes and avocado. Season well with salt, pepper and a good squeeze of lemon juice and give it a good mix through.
- Add the olives, seeds and rocket to the bowl and tear in the basil leaves.
- Heat the beans as per the instructions on the tin, drain and add to the salad. (Alternatively, you can leave the beans cold, but i think heating them adds something to the salad).
- Add a drizzle of proper olive oil over the salad and toss to combine. The juices from the tomatoes will combine with the lemon juice and the oil to make a delicious fresh dressing. Enjoy!
