Chicken Sausages With Apple Salad
- 1 red onion small, thinly sliced
- 1 tablespoon cider vinegar
- 3 tablespoons butter melted
- 2 cloves garlic crushed
- 2 tablespoons flat-leaf parsley finely chopped
- 2 Ciabatta rolls halved horizontally
- 12 ounces chicken sausage
- 3 ounces baby spinach leaves
- 2 granny smith apples small, cored, unpeeled, cut into matchsticks
- 1/4 cup chopped pecans toasted
- 2 tablespoons pumpkin seeds toasted
- 1 tablespoon vegetable oil
- barbecue sauce to serve
- Combine onion and vinegar in a large bowl. Season with salt and pepper. Set aside.
- Place butter, garlic and parsley in a small bowl; mix well. Brush bread with butter mixture. Spray skillet with no stick cooking spray. Heat on medium-high heat. Add sausages; cook and turn for 7-8 mins or until cooked through. Transfer to a plate. Add bread to pan; cook for 1-2 mins or until toasted.
- Add spinach, apples, pecans and pumpkin seeds to onion mixture. Drizzle with oil. Toss to combine. Top with sausages and drizzle with barbecue sauce. Serve salad with bread.
