Praline Affogato
- 1 2/3 cups milk
- 1 vanilla bean split
- 6 large egg yolks
- 1/2 cup sugar
- 1 1/4 cups heavy cream
- 5.25 oz pralines, crushed
- 6 jiggers espresso to serve
- biscotti to serve
- Heat the milk and vanilla bean until almost boiling. Remove from heat and remove the vanilla bean.
- Beat the egg yolks with the sugar until thick, then add the milk in a thin stream, stirring constantly.
- Strain the mixture into a clean saucepan and stir over low heat until thickened. This will take 8-10 mins. When the mixture coats the back of a wooden spoon, remove and transfer to a clean bowl sitting in a larger bowl of iced water. Stir in the cream and leave to cool completely.
- Churn in an ice cream machine following the manufacturer's instructions, then fold in the pralines. Spoon into a metal container and freeze.
- Place large scoops of ice cream into serving bowls. Serve with biscotti and a shot of espresso on the side.
