Chocolate Parcel Cake
- 3/4 cup butter or margarine
- 3/4 cup granulated sugar
- 3 eggs
- 2 1/2 cups all-purpose flour sifted
- 2 1/2 teaspoons baking powder
- 1/2 cup 2% milk
- 7 ounces chocolate bars mixed, 5 oz roughly chopped, remainder sliced
- 10 1/2 ounces marzipan
- 2 teaspoons cocoa powder
- 2 tablespoons apricot jam
- 4 red licorice laces thin
- Preheat oven to 350u0b0F. Grease and flour a 10x4 inch loaf pan.
- Cream butter, sugar and a pinch of salt until light and fluffy. Add eggs, 1 at a time, until smooth. Fold in flour and baking powder alternately with milk. Fold in chopped chocolate bars. Transfer to loaf pan, smooth surface and bake for 50-60 mins. Let cool for 10 mins then remove from pan to cool completely.
- Meanwhile, sprinkle marzipan with cocoa powder. Roll out thinly into a 20x12 inch rectangle. Bring jam with 1 tbsp water to a boil. Place cake on a serving plate and coat with jam. Enclose cake in marzipan. Press edges together and shape into a parcel. Trim excess. Arrange licorice laces to suggest an opened parcel. Decorate with sliced candy bars and dust with cocoa powder.
