Sauteed Chicken With Ginger

  1. Cut chicken into thin strips.
  2. Heat the oil in a wok.
  3. Add the chopped onion and minced garlic and saute on high heat for 3 minutes.
  4. Add the chicken and ginger to the wok.
  5. Saute for 10 minutes until chicken is cooked through and golden.
  6. In a bowl, mix sherry vinegar, tomato paste, sugar, orange juice, and cornstarch.
  7. Pour this mixture into the wok and cook until it begins to bubble and the juice thickens.
  8. Remove the wok from heat.
  9. Add clementine quarters and stir carefully.
  10. Sprinkle with chopped cilantro.
