Easy Asian Chicken Lettuce Wraps
- 2 pounds ground chicken lean
- 6 cloves garlic chopped
- 6 ounces shitake mushrooms chopped
- 1/2 cup low sodium soy sauce
- 1/3 cup duck sauce
- 3 tablespoons hoisin sauce
- 1 tablespoon sesame oil
- 1/4 cup water
- scallions sliced
- romaine lettuce {iceberg is a better vessel but romaine has more nutrition}
- matchstick carrots {or shredded if you can't find
- red cabbage shredded
- fresh cilantro
- In a bowl stir together the soy sauce, water, duck sauce, hoisin and sesame oil.
- In a large saute pan, over medium heat, add the olive oil, garlic and mushrooms. Cook until the mushrooms have cooked down a bit and the garlic is fragrant.
- Add in the chicken and break up the meat as it is cooking with either a wooden spoon or my favorite a potato masher.
- When the chicken is mostly cooked through go ahead and stir in the sauce and cook a few more minutes until the chicken is cooked through.
- Shut the heat and stir in a couple handfuls of scallion.
- I served all the fixings on a platter... the lettuce leaves, carrots, shredded cabbage and cilantro.
- Add a bit of chicken to the lettuce and top with all those gorgeous colored veggies.
