Goat Cheese And Tomato Salad
- 1/4 cup extra virgin olive oil
- 1 tablespoon red wine vinegar
- 1 tablespoon grainy mustard
- goat cheese

- 1/3 cup fresh parsley finely chopped
- 2 tablespoons fresh chives finely chopped
- 1 tablespoon fresh marjoram finely chopped
- 5 1/4 ounces goat cheese
- 4 tomatoes large, sliced
- 1 pound tomatoes mixed baby, halved
- 4 slices prosciutto torn
- 2 tablespoons pine nuts toasted
- crusty bread to serve
- For the dressing, whisk together olive oil, red wine vinegar and mustard. Set aside.
- Combine herbs in a shallow dish. Roll goat cheese in herbs to coat. Slice into 4 rounds.
- Distribute tomatoes between serving plates. Season. Top with a piece of goat cheese and drizzle with dressing. Add prosciutto and pine nuts. Serve with crusty bread.
