Chex Tuna Pie
- 1 egg, slightly beaten
- 1/2 c. mayonnaise or salad dressing
- 1/2 tsp. dry mustard
- 1/4 tsp. salt
- dash to 1/8 tsp. ground red pepper
- 1/4 c. chopped onion
- 3 Tbsp. chopped green pepper
- 1 1/2 c. Wheat Chex cereal, crushed to 1/2 c.
- 1 (9 1/4 oz.) can chunk light tuna, drained and flaked
- 1 (10 oz.) pkg. frozen mixed vegetables, cooked and drained
- 1/2 c. (2 oz.) shredded Cheddar cheese, divided
- Preheat oven to 325u0b0.
- In bowl, combine egg, mayonnaise, dry mustard, salt, pepper, onion and green pepper.
- Stir in Chex crumbs.
- Mix in tuna.
- Press gently into 8-inch pie plate with spoon.
- Shape to fit like a pastry shell.
- Toss vegetables with 1/4 cup cheese.
- Turn into shell.
- Sprinkle remaining cheese over vegetables.
- Bake 25 minutes or microwave on High 5 minutes or until crust is firm.
- Makes 6 servings.
