Tutie'S Whole Wheat Bran Muffins
- 1 c. bran cereal
- 1 c. water
- 1/2 c. vegetable oil
- 1 c. honey
- 2 c. buttermilk
- 2 eggs, lightly beaten
- 1 1/4 c. packed brown sugar
- 2 c. rolled oats
- 3 1/2 c. whole wheat flour
- 1 tsp. salt
- 1 Tbsp. baking soda
- 1/2 tsp. each: cloves, cinnamon and nutmeg
- 1 c. pecan pieces
- 1 c. raisins
- Mix and let stand 10 minutes the bran cereal and 1 cup water. Combine oil, honey, buttermilk, eggs and brown sugar.
- Mix well to combine and stir in bran mixture.
- Combine in very large bowl the oats, flour, salt, baking soda, cloves, cinnamon, nutmeg, pecan pieces and raisins.
- Mix the liquid and dry ingredients, stirring until well moistened.
- Let batter rest 10 minutes.
- Bake in muffin tins at 400u0b0 for 17 to 19 minutes until brown and shiny and a toothpick inserted comes out clean.
