Chicken Caesar Salad
- 1/2 cup bread wholegrain, cubed
- 2 teaspoons oil
- 2 slices bacon chopped
- 7 ounces baby romaine lettuce
- 12 ounces chicken shredded
- 2 eggs hard-boiled, halved
- dressing
- 1/2 cup olive oil
- 1/2 lemon juiced
- 1 tablespoon red wine vinegar
- 1 tablespoon anchovies drained, chopped
- 2 cloves garlic minced
- hot sauce to taste
- 1/4 cup Parmesan cheese shaved, to serve
- Preheat oven to 350u0b0F. Toast bread for 5-10 mins, until golden. Set aside to cool.
- Meanwhile, heat oil in a frying pan. Add bacon and cook for 2 mins, until crispy. Drain on paper towels. Chop. Toss with lettuce, chicken and hard-boiled eggs.
- To make the dressing, whisk together olive oil, lemon juice, vinegar, anchovies, garlic and hot sauce. Season.
- Drizzle dressing over salad and top with croutons and Parmesan. Serve immediately.
