Coconut Chocolate Sandwich Cookies

  1. Preheat the oven to 350u0b0F. Lightly grease and line 2 baking sheets with parchment paper.
  2. For the ganache: In a small saucepan, bring cream almost to a boil. Remove from heat, add chocolate and stir until melted and smooth. Chill for 30 mins until thick and spreadable.
  3. Beat butter and sugar together until light and fluffy. Beat in egg and golden syrup. Fold in the flour, coconut and oats.
  4. Roll rounded teaspoonfuls of mixture into balls and arrange on baking sheets 2 inches apart. Flatten with a fork. Bake 10-12 mins, until golden brown. Allow to cool on baking sheets.
  5. Sandwich cookies with chocolate ganache filling in the center and chill until firm.
