Pumpkin Bread Lite
- 1 cup apple cider
- cooking spray
- 1 cup all-purpose flour
- 1 cup wheat 100% white whole
- 1 cup sugar
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon cloves groun
- 1/8 teaspoon ginger ground
- 16 ounces pumpkin puree
- 1/4 cup canola oil
- 2 eggs
- Reduce apple cider to 1/4 cup, by boiling in a small heavy saucepan over medium high heat (about 15 to 20 minutes). Once reduced, cool before using.
- Preheat oven to 350 degrees F. Coat a 9 by 5 by 3 inch loaf pan with cooking spray.
- Mix dry ingredients thoroughly in a large bowl.
- Beat pumpkin, oil, eggs and 1/4 cup reduced apple cider together. Add to dry ingredients just until dry ingredients are moistened. Do not overmix.
- Pour batter into loaf pan. Bake approximately 45 to 50 minutes, or until toothpick inserted in center of loaf comes out clean.
