Blackened Steak With Blue Cheese Wine Sauce

  1. Heat large nonstick skillet over medium-high heat for 1 minute
  2. Meanwhile, rub all sides of steaks with olive oil and steakhouse seasoning. Add a few drops of oil to the pan and swirl lightly to coat.Put steaks in skillet and sear for 1 minute per side.
  3. Turn heat to medium-low and cook, turning every 2 minutes until done to your liking.
  4. Turn burner back to medium-high, remove pan from heat, and add wine and blue cheese. Wait until the wine has stopped steaming and return to pan to heat.
  5. Simmer until sauce thickens, turn to coat the steaks with sauce
  6. Move steaks to a clean plate, cover loosely with foil and let them rest for 5 minutes before serving to ensure they will be nice and juicy.
