Thanksgiving Leftover Casserole
- 4 tablespoons butter
- 3 tablespoons shallot finely diced
- 4 tablespoons flour
- 32 ounces turkey broth
- 1 tablespoon gravy master found near jarred gravy
- chopped parsley fresh
- 2 cups green beans leftover chopped
- 2 cups potatoes leftover roasted
- 3 cups turkey leftover diced
- 3 cups stuffing leftover
- Start by making the gravy, we will use half in the recipe and half for topping the casserole when served.
- In a saucepan, over low heat, melt the butter then add in the shallots and cook until softened. Whisk in the flour until smooth and allow to cook for a couple minutes to cook out the raw flour taste.
- Whisk in the broth and continue to whisk until well combined and lump free. Add in the gravy master and season with salt and pepper. Bring to a boil then lower to a simmer. Simmer for 10-15 minutes until slightly thickened. Stir in some fresh chopped parsley. Set the gravy aside.
- Preheat the oven to 375 degrees.
- Add the turkey, green beans and potatoes in a bowl . Add in half the gravy and stir until combined. Pour into a large baking dish.
- Spread the stuffing over the top. Bake for about 30-40 minutes until bubbly and the stuffing is lightly golden. Serve the remaining gravy on the side to pour overtop.
