Corn And Cheese Pancakes
- 1 cup self rising flour sifted
- 12 ounces sweet corn
- 2 ounces cheddar cheese grated
- 2 green onions finely sliced
- 1 tablespoon sugar
- 2/3 cup milk
- 1 egg
- 3 1/2 tablespoons butter melted, plus extra, for brushing

- Combine flour, corn, cheese, green onions and sugar. Whisk together milk, egg and melted butter until combined then gradually whisk into corn mixture until smooth.
- Heat a large, nonstick frying pan over medium heat. Brush with extra melted butter. Working in batches, spoon tablespoonfuls of batter into pan and cook for 1-2 mins, until bubbles appear on the surface. Flip over and cook for 1 min, or until golden and cooked through.
- Top with ham and chutney to serve.
