Lemon Soy Chicken
- 8 chicken pieces
- 2 lemons zested, pith removed, sliced
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 3 cloves garlic crushed
- 1/2 teaspoon cornstarch
- 2 green onions sliced diagonally, to serve

- Using kitchen scissors, trim excess skin and fat from chicken pieces. Pat dry with paper towel. Cut drumsticks from thighs. Cut thighs in half.
- In a bowl, combine lemon zest, soy sauce, brown sugar and garlic. Brush over chicken and place, skin side up, in a large baking dish. Scatter with lemon slices. Chill, covered, for 3 hours or overnight.
- Preheat oven to 350u0b0F. Sprinkle chicken skin with salt. Bake for 40 mins, basting 2-3 times. Transfer to a plate. Increase oven to 400u0b0F. Strain pan juices into small saucepan. Return chicken to baking dish and bake for 10-15 mins, until skin is crisp.
- To make gravy, skim excess oil from pan juices with a spoon. Blend cornstarch with a little water, whisk into pan juices. Bring to a boil and simmer for 5-10 mins, until thickened. Serve chicken on a bed of steamed rice with sauce, broccolini and green onions.
