Healthy Egg Quiche
- 2 large eggs
- 1/4 cup gluten free flour Pillsbury
- 1 teaspoon baking powder
- 10 ounces baby spinach bag of, chopped
- 1/2 cup egg beaters
- salt
- 1/4 cup sun dried tomatoes julienned
- 2 tablespoons olive oil
- 5 garlic cloves minced
- 1 cup 2% milk or fat free
- 1/4 cup cheddar cheese
- 1/2 cup feta cheese
- Sautee minced garlic on medium heat with olive oil
- Chop the spinach, add the spinach to the garlic. Sautee on medium heat for 5 min
- Add the sundried tomatoes to the spinach
- In a bowl- mix together the flour, baking powder, salt, pepper, onion powder, garlic powder, and paprika.
- Whisk in eggs. Then whisk in egg beaters, milk and cheddar cheese
- Add the spinach mixture to the egg batter. Mix well
- Spray casserole dish with Pam, pour in egg quiche mixture
- Top with feta cheese
- Bake at 400 for 30 minutes. Make sure middle is set, if not bake an additional 2-4 minutes-- let cool and enjoy!
