Healthy Egg Quiche

  1. Sautee minced garlic on medium heat with olive oil
  2. Chop the spinach, add the spinach to the garlic. Sautee on medium heat for 5 min
  3. Add the sundried tomatoes to the spinach
  4. In a bowl- mix together the flour, baking powder, salt, pepper, onion powder, garlic powder, and paprika.
  5. Whisk in eggs. Then whisk in egg beaters, milk and cheddar cheese
  6. Add the spinach mixture to the egg batter. Mix well
  7. Spray casserole dish with Pam, pour in egg quiche mixture
  8. Top with feta cheese
  9. Bake at 400 for 30 minutes. Make sure middle is set, if not bake an additional 2-4 minutes-- let cool and enjoy!
