Classic Red Velvet Cake

  1. HEAT oven to 350u0b0F. Coat 3 (9-inch) round cake pans with no-stick cooking spray.
  2. BEAT sugar and eggs together in a large bowl with electric mixer on medium speed until combined. Add oil, food coloring, 2 teaspoons vanilla and vinegar. Beat until smooth. Add flour, cocoa, baking soda, salt and buttermilk. Beat 2 minutes, scraping bowl occasionally. Pour into prepared pans.
  3. BAKE 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove from pan. Cool completely.
  4. BEAT cream cheese and butter in large bowl with electric mixer on medium speed until creamy. Add 1 teaspoon vanilla and powdered sugar. Beat until light and fluffy, about 2 minutes. Frost cake as desired.
