Chicken Gizzards In Sauce
- 1 pound chicken gizzards
- 1 clove garlic minced
- 1 carrot medium, shredded
- 1 brown onion medium, diced
- 1/2 green bell pepper chopped
- 1 tomato medium, diced
- 1 cup chicken broth
- 1 teaspoon cumin
- 1 bay leaf
- 1 pinch oregano
- salt
- 1/4 teaspoon chili powder or a teaspoon of chopped jalapenos, optional
- olive oil
- Heat a dash of olive oil in a 12" skillet over medium heat and add onion, garlic, shredded carrots, and bell pepper. Cook for a few minutes to soften.
- Add the chicken gizzards and brown quickly.
- Add the diced tomato, cumin, bay leaf, salt, and pepper.
- Add chicken broth and simmer for 30-45 minutes until most of the liquid has evaporated, stirring occasionally.
- Remove bay leaf and serve hot over rice or with roasted potatoes.
