Goat Cheese, Pea And Mint Salad
- 1 teaspoon wholegrain mustard
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 1 tablespoon olive oil
- 3 ounces fresh peas cooked
- 5 1/4 ounces celery stalks small, pale, thinly sliced
- 3 tablespoons celery leaves young
- 1 head lettuce frisee, trimmed
- 1 head treviso or radicchio, leaves separated
- 3 red radishes medium, thinly sliced
- 1 red apple medium, thinly sliced
- 3 tablespoons fresh mint leaves
- 7 3/4 ounces goat cheese sliced
- To make the honey mustard dressing, whisk together all ingredients. Set aside.
- Toss together all ingredients for salad. Just before serving, drizzle honey mustard dressing over salad and toss to combine.
