Cajun Chicken Pitas
- 4 boneless skinless chicken breasts
- 3 tablespoons olive oil
- 5 tablespoons cajun seasoning
- 2 avocados small ripe, peeled and stoned
- 3 tablespoons lemon juice
- 6 pita breads
- 6 ounces baby greens mixed
- 1 red onion peeled and thinly sliced
- sour cream to serve
- tomato salsa to serve
- Place the chicken between 2 sheets of plastic wrap and beat with a rolling pin to flatten slightly. Brush chicken with olive oil and sprinkle with Cajun seasoning to coat.
- Heat a grill pan until very hot. Cook the chicken for 4-5 mins each side until golden and cooked through.
- Mash the avocado with the lemon juice and season to taste. Spoon into a bowl and cover with plastic wrap until ready to serve.
- Slice the chicken into chunky pieces. Split open the pita breads and fill with mixed greens, red onion and chicken. Serve with the avocado dip, sour cream and tomato salsa.
