Breakfast Pita Sandwiches
- vegetable cooking spray
- 1/2 cup fresh mushrooms thinly sliced
- 1/4 cup chopped onion
- 1/4 cup green pepper chopped
- 3 egg substitutes or 6 egg whites, beaten
- 1/2 cup lean meat diced, cooked, turkey, chicken or seafood
- 1/4 cup low-fat cottage cheese
- 1/8 teaspoon pepper
- 1/4 cup shredded low-fat cheese
- 2 whole wheat pita bread rounds 6 inch, cut in half c
- Coat medium skillet with cooking spray; place over medium heat until hot. add mushrooms, onion and green pepper to skillet; saute until tender.
- Combine eggs, meat, cottage cheese and pepper in a small bowl; pour over vegetables. Cook over medium heat, stirring often, until eggs are firm but still moist. Stir in cheese. Spoon 1/2 cup mixture into each pita half. Serve immediately. Yield: 4 servings (143 calories per serving).
