Bean And Sausage Stew

  1. Slice sausages.
  2. Grill pork belly until almost done.
  3. Boil sausages (before cooking, prick them with a fork so that they don't burst).
  4. When done, slice sausages and save the cooking water.
  5. Shred cabbage.
  6. Heat some olive oil in a large skillet and saute onion and garlic until golden brown.
  7. Add sliced sausages and bacon, and cook for 5 minutes, stirring occasionally. Add cabbage and grilled pork belly.
  8. Cover pan, reduce heat and simmer for about 15 minutes.
  9. If necessary, add a bit of sausage cooking water.
  10. Finally, add undrained beans and cook for 15-20 minutes over low heat.
  11. Mix carefully, so as not to break beans.
  12. In a saucepan, cook rice with in boiling sausage cooking water, according to package instructions.
  13. Arrange sliced sausages on top of bean mixture.
  14. Serve with rice.
