Zucchini-Crusted Pizza
- olive oil and flour for the pan (I used nonstick spray)
- 2 c. packed, grated zucchini
- 2 egg whites
- 1/4 ??? whole wheat flour
- 1/2 c. nonfat Mozzarella
- 1/2 c. nonfat Parmesan
- pinches of basil, garlic, marjoram and/or rosemary (optional)
- 2 Tbsp. olive oil
- Preheat oven to 400u0b0.
- Prepare a 10-inch pie pan.
- Combine zucchini, egg whites, flour, cheeses, herbs and 1 tablespoon of olive oil in a bowl and mix well.
- Spread into the prepared pan and bake for 35 to 40 minutes or until golden brown.
- About halfway through the baking, brush with the remaining tablespoon of oil.
- Remove from oven and let cook for about 10 minutes.
- Top with your favorite heart healthy pizza items and return to oven until heated through.
