Spaghetti With Spicy Chicken And Feta
- 1 tablespoon vegetable oil
- 1 pound boneless chicken thighs
- 1 clove garlic crushed
- 1 teaspoon dried oregano
- 1 pinch dried chili flakes
- 14 ounces chopped tomatoes
- 2 tablespoons tomato puree
- 1 tablespoon red wine vinegar
- 10 ounces spaghetti
- 1 tablespoon fresh flat leaf parsley chopped
- 2 ounces feta crumbled
- salad to serve
- For the chicken, heat 1 tbsp oil in a frying pan on high heat. Add chicken and cook, turning, 4 mins, until browned. Transfer to a plate and let rest 5 mins. Slice thickly.
- For the sauce, add garlic, oregano and chili flakes to same pan. Cook on medium heat, stirring, 30 seconds, until fragrant. Stir in tomatoes and tomato puree. Simmer, stirring occasionally, 10 mins, or until thickened. Add chicken, juices and vinegar. Cook, stirring occasionally, 5 mins, or until chicken is cooked through. Season to taste.
- Meanwhile, cook spaghetti according to package instructions. Drain and return to pan. Add parsley and 2 tsp oil. Toss to combine. Season to taste and divide between serving bowls. Top with sauce and chicken, sprinkle with feta and serve with salad.
